Long back I found a Chinese delicacy referred to as "Beggar's Chicken" and was expecting a chance to cook it myself. it's the Chinese version of the roasted chicken dating back to the Qing. the method involves wrapping an entire spiced chicken in lotus leaves, then encasing it in mud and roasted in the fire. When fully cooked, the mud forms a tough shell around the chicken and cracked open before revealing the deliciously roasted chicken inside.

As per the legend, a beggar in Zhejiang province stole a chicken from a village and buried it in the mud. He retrieved the mud-covered chicken latter, and rather than cleaning the mud he just threw it in a fire. This resulted in hardening the muddy shell round the chicken with a deliciously roasted bird inside. He then started selling chickens cooked this manner and made a fortune for himself, also creating a Chinese culinary tradition referred to as "Beggar's Chicken

Mud Baked chicken is very tasty and the heat changes it into soft juicy and tender meat. First, the chicken is marinated with spices. then it is wrapped in Aluminium foil, the Aluminium foil needs to airtight the chicken. now apply mud to the outer side of the Aluminium foil. Put the whole chicken in the fire. Mud chicken cooking time depends on the heat of the fire usually it is two to three hours. the heat slowly steams and bakes the chicken. the juices remain inside, which make the chicken delicious and tender. this is also known as clay chicken. This mud chicken recipe is very easy and simple to make.
