There are various ways to dry herbs ~ today we go through the most traditional way:

**DRYING BY UPSIDE-DOWN HANGING**

Step 1: Harvest your herbs. Use scissors to cut, leaving some stem.

Step 2: Wash if desired and let thoroughly dry.

Step 3: Bundle in bunches that are small enough that air can circulate throughout. Tie with rubber bands around the stems.

Step 4: Hang bundles from the stems. I use paperclips to attach rubber band around stems to the string from which bundles will hang.

Step 5: Allow to totally dry (usually takes a few weeks), then either crush and save or leave leaves whole and save. Store in a glass, closed container in a cool, dry place.

Voila! Preserve all that that last plant goodness before the cold weather comes!
