This is hands down my favourite salad of the moment. I learned to make it in Thailand several years ago when I visited for the first time and fell in love!
Sweet, sour, spicy, nutty, this salad appeals to all the senses. Once you start making it, you won't be able to stop :)

RECIPE
1/2 Pomelo (peeled, segmented, and separated into chunks)
Juice of 3 Limes
4 tbsp, Fish Sauce
2 tbsp, White Sugar
1 Thai Chilli, finely minced
1 lb, peeled and deveined Shrimp
1 stalk Lemongrass
1/2 cup, torn Mint
5 Kaffir Lime Leaves, thinly sliced
1/3 cup Roasted Peanuts, coarsely chopped
4 tbsp, Toasted Coconut
METHOD
In a bowl, whisk together Lime Juice, Fish Sauce, White Sugar, and Thai Chilli. Taste and adjust accordingly to personal preference i.e. extra chillis, etc.
Bring a pot of water to a boil, and generally season with salt. Add Shrimp and cook for 1 minute, or until slightly springy to the touch, but translucent in the middle. Drain and allow to cool.
Remove the woody base and tough exterior leaves of the Lemongrass, and chop off the bottom 2 inches of the stalk. Finely slice the bottom 2 inches of the Lemongrass. Finely slice the Kaffir Lime Leaves.
In a bowl add Pomelo, Lemongrass, Kaffir Lime Leaves, Mint, Shrimp, half the Roasted Peanuts, half the Toasted Coconut, and all the dressing. Toss to coat.
Garnish with remaining Roasted Peanuts, Toasted Coconut, and a few extra Mint Leaves. Enjoy! :)
