The Great Depression was 1929 to 1940, and many suffered long after. My grandmother was the queen of making meals that were not only a hodgepodge of ingredients, but would last for more than one meal and in turn, tasted amazing!
Long after the end of the great depression her creativity did not end with it. Most of her recipes stayed constant in her kitchen and honestly, we all loved them.
I am not exactly certain how this dish got the name German Spaghetti, but no matter what you call it, it is good. It is an unusual balance of flavors and it takes me right back to her kitchen table.
We loved it and it fed us all and normally had some for the next day.
I miss her so much, but I thank her daily for the things she taught me in the kitchen.

Nanny's German
Spaghetti

1 pd spaghetti
5 to 6 bone in pork chops
1 1/2 large onions sliced
Ketchup
salt and pepper

fry your chops in batches in your largest skillet.
Add only salt and pepper, no flour, in a few tablespoons of oil.

In a large pot, start your noodles and cook until half done. Turn off heat. Reserve water.

Remove from skillet when they are beginning to brown and set aside. Fry the next batch. Once they are cooked the same, remove and add your onions to the pan.
Cook until almost soft, then add one cup of the pasta water.
Get all the bits off the bottom of the pan.
Stir well .
Add a scoop or two of the noodles and mix well with the onions, add your chops throughout the pan, kinda stacking around as you go. ( see video)
Add enough water from the pasta to ALMOST cover the noodles and cook on med to med low for almost an hour, stirring and folding as you go.

When done, if there is any meat left on bones, you can take is out and dice it and then stir it back in...

NOTE:
We keep the bones in the pasta, so if you have little ones, you may want to remove them.

Serve hot and allow each member of the family to add their own ketchup ( yep ketchup) at the table.

PLEASE NOTE: You do not have to use the ketchup, the meal is extremely good without it...
