Mutton Ghee Roast Ingredients
For Marination:

800g Mutton (bone-in shank or shoulder pieces are ideal with some fat)
1/2 cup thick plain yogurt (dahi) - Sorry I said 1 cup in the video :(
1 tbsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp salt
1 tbsp lemon juice

For the Ghee Roast Masala Paste:
10-12 Kashmiri or Byadgi red chilies (adjust to your spice preference)
2 tbsp coriander seeds
1 tsp cumin seeds (jeera)
1/2 tsp fenugreek seeds (methi dana)
1/2 tsp peppercorns
3-4 cloves (laung) - I missed to show cloves in the video :(
1-inch cinnamon stick (dalchini)
1 star anise (badiyan ka phool)
1/2 tsp fennel seeds (saunf)
1-inch piece of fresh ginger, roughly chopped
5-6 cloves of garlic
2 tbsp tamarind pulp (or 1 tsp tamarind paste)
1/4 cup water (for grinding)

For the Roasting Process:
1/4 cup ghee (or more, as the name suggests)
2 sprigs of fresh curry leaves
1 medium onion, finely chopped
1 tsp jaggery (gud) or brown sugar (optional, for balance)
Salt to taste
