When you think of Grenada and food, one of the first things that comes to mind is oil down. It's a mix of meat and vegetables stewed in coconut milk, creating an oil that's soaked up by the ingredients. This process is ultimately what gives the popular food its name. And it also happens to be the Spice Island's national dish. 

But not only is oil down a hearty meal that's pleasant on the taste buds, every pot made carries a piece of Grenadian history. Its origins date back to the days of slavery when enslaved persons would share a meal with each other using what they had available.

Today, oil down is a local delicacy that can be eaten at any time and is also a favorite during Carnival as well as on Grenadian Independence Day. I had the pleasure of tasting this awesome meal thanks to the gifted hands of Chef Kim, who has been setting up shop near the Carenage for the last several years. And we had a quick chat about the significance of oil down for him.
