It's the time of year when you can harvest broad beans. This year it was difficult to keep the bean plants alive at all. Flea beetles, slugs and aphids have left their marks. But the beans themselves tasted very good after all.

Ingredients:

300g broad beans (fava beans)
1 handful fresh sage leaves
1 tsp. salt
100g pasta
3 tbsp. olive oil
1/2 tsp. fermented garlic paste
40g Feta cheese
30g miso-fermented onions


Preparation:

1. Peel the beans from their pods and cook them for 3 to 4 min.
2. Put the cooked beans in ice water and squeeze them out of their hulls.
3. Cook the pasta according to the package instructions.
4. Chop the sage leaves and fry them in olive oil until crisp.
5. Add the fermented garlic and continue frying for 2 min.
6. Serve the pasta with the beans, feta cheese and fermented onions. Decorate with savory.
