The ride that became Star Tours first saw light as a proposal for an attraction based on the 1979 Disney live-action film The Black Hole. It would have been an interactive ride-simulator attraction where guests would have had the ability to choose the route. However, after preliminary planning the Black Hole attraction was shelved due to its enormous cost—approximately $50 million USD—as well as the unpopularity of the film itself.
Instead of completely dismissing the idea of a simulator, the company decided to make use of a partnership between Disney and George Lucas, the creator of Star Wars, that began in 1986 with the opening of Captain EO (a 3-D musical film starring Michael Jackson) near Space Mountain. Disney then approached Lucas with the idea for Star Tours. With Lucas' approval, Disney Imagineers purchased four military-grade flight simulators at a cost of $500,000 each and designed the ride structure.

The original Star Tours attraction closed in 2010 to be refurbished in 2011 as The Adventures Continue (which is the subject of this video). The POV of the original is on the End screen, if you want to compare.

The ride is always a random experience for each ride. At the 2015 D23 Expo, it was announced that a desert planet called Jakku from The Force Awakens would be added to the attraction. The new adventure became available beginning November 16, 2015. The mineral planet Crait from The Last Jedi and Batuu, the remote outpost forest and mountain planet from Star Wars: Galaxy's Edge, were added to the attraction on November 17, 2017. The ocean moon Kef Bir from The Rise of Skywalker was added to the ride on December 20, 2019, the film's release date along with Exegol, another planet from The Rise of Skywalker.

In April 2023, Imagineer Scott Trowbridge announced at Star Wars Celebration Europe IV that more scenes (based on Mandalorian, Andor, and Ahsoka) would be added to the Disneyland, Walt Disney World, and Disneyland Paris iterations of the attraction, which occurred on April 5, 2024.
