학명은 Helianthus annuus L.이다. 해바라기라는 이름은 두상화서가 해를 따라 도는 것으로 오인한 데서 붙여진 것이다. 북미원산이며 전초에 짧은 강모가 나 있다.
잎은 어긋나고 심장꼴이며 대형이고 잎 가장자리에 톱니가 있다. 꽃은 여름철에 노랗게 피며, 줄기 끝에 대형의 두상화를 이루는데, 가장자리에는 혀꼴의 꽃이 늘어서고 가운데에는 관상화가 빽빽이 늘어선다. 꽃이 진 뒤 가을철에는 검게 익은 수과로 되고, 모여서 둥근 벌집꼴로 된다.
수과에는 고급지방산이 들어 있어서 식용유, 특히 성인병 방지에 좋다고 한다. 따라서 여러 가지 좋은 품종이 육종되어 전 세계적으로 널리 재배되고 있다.
한방에서는 줄기속〔莖心〕을 약재로 이용하고 있다. 약성은 온(溫)하고 감(甘)하며 이뇨·진해·지혈의 효능이 있다고 하여, 소변불리·요로결석·방광결석·신결석·해소·백일해·외상출혈의 증상에 치료제로 사용한다.
또, 해바라기속의 일종인 돼지감자(일명 뚱딴지)는 뿌리줄기에 이눌린(inulin)이 많이 들어 있어 식용 또는 알코올 제조용으로 이용되고 있다. 이것은 개화기에 우리나라에 들어왔는데 번식력이 강해서 각처에서 자생상태로 자라고 있다.

It is used to treat urinary incontinence, urinary stones, bladder stones, kidney stones, diarrhea, whooping cough, and external bleeding. Also, Jerusalem artichoke (also known as Ttungttangji), a member of the sunflower genus, contains a high amount of inulin in its rhizome, making it useful for food and alcohol production. It was introduced to Korea during the flowering season, and due to its strong reproductive capacity, it now grows wild in various locations.
