Taco Bomb Ingredients:
1 1/4 cups self rising flour (1 cup for dough and the 1/4 cup to knead and roll out dough with)
1 cup Fat free Greek yogurt
3 oz 50% reduced fat cheddar cheese
8 oz lean ground turkey
1 lg egg
1 cup salsa (half for meat mixture and half to dip with)
1 cup corn
1 cup chopped onions
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
cooking spray
To make the dough, combine the yogurt with 1 cup of flour. Mix together then knead well.
For the filling, cook turkey and onions together on med-high heat in a large pan that has been sprayed with cooking spray. Add in chili powder, cumin and garlic and cook until meat is browned and onions are softened. Add in corn and 1/2 cup of the salsa. Mix and cook an additional minute or two to remove any excess moisture from the salsa. Set aside and let cool slightly.
Cut dough into 8 equal parts and roll each part into a 5 inch diameter circle. place a Tbsp of cheese in the middle and top with 1/4 cup meat mixture. Pull sides of dough up and together and pinch to close. Place seam side down on a baking sheet lined with parchment paper. Brush balls with slightly beaten egg. Top with remaining cheese and jalapeno. Bake at 425 for about 15 minutes. Serve with remaining salsa.
