Dahibara Recipe in Odia...

"Dahibara" is a popular dish from the Indian state of Odisha. It is also known as "Dahi Vada" in other parts of India. Dahibara consists of deep-fried lentil dumplings (vadas) that are soaked in a tangy yogurt sauce and typically served with various toppings and chutneys.

To make dahibara, a batter is prepared by grinding soaked urad dal (split black lentils) with spices and sometimes with added ginger and green chilies. The batter is then shaped into small rounds or flattened dumplings and deep-fried until golden brown and crispy. Once fried, the vadas are soaked in water to remove excess oil and to make them soft and spongy.

To serve dahibara, the fried vadas are taken out of the water and gently squeezed to remove any excess water. They are then placed in a bowl or a plate and topped with a generous amount of beaten yogurt seasoned with salt, sugar, roasted cumin powder, and sometimes black salt. Additional toppings like tamarind chutney, green chutney, chopped onions, coriander leaves, and sev (crunchy chickpea flour noodles) may be added for extra flavor and texture.

Dahibara is a refreshing and savory dish that is often enjoyed as a snack or as a part of festive meals in Odisha and other parts of India.
