Marzipan, a classic christmas sweet that is made with almonds or cashew nuts. In Goa, it's made with cashew nuts during christmas as cashews are one of the local produce. Marzipan is often given cute shapes and pretty colours which makes them a kids favourite toffee. It's also easy to make and requires only 3 Ingredients (not including color). Adding colour to Marzipan dough is completely Optional. They look pretty with their original off-white color as well.

1 Cup = 250 ML
1 Tbs = 15 ML
1 Tsp = 5 ML

Ingredients:
250 Gms Or 1 Cup Cashew Nuts (Whole or Pieces)
200 Gms Or 3/4 Cup Sugar
1 Tsp Vanilla Extract (Or Almond Extract)
Lukewarm Water For Soaking Cashews
1/4 Cup + 1 Tbs For Blending Cashews
A Pinch Of Orange Food Color
A Pinch Of Green Food Color

Recipe:
1) Soak cashews in lukewarm water for 10 minutes
2) Drain water and wash them twice with regular water. Remove peel if any
3) Blend in with 1/4 Cup water in pluse mode. Stop blender, open and mix the paste with a spoon while blending and repeat the process till cashews form a smooth paste. Add 1tbs water if needed while blending. Don't worry if the paste is a little course.
4) Add this paste to a non stick or heavy botton pan along with sugar and give it a stir.
5) Place the pan of a gas burner, stir and cook on low flame
6) As the sugar melts, paste will become diluted. Continue cooking while continuously stirring.
7) Add vanilla or almond extract when paste becomes thicker
8) To check if paste is ready, add a few drops in cold water, let it cool down before attempting to roll it into a ball.
9) If your paste, becomes a non sticky ball that holds its shape, your paste is ready.Turn off flame.
10) Pour the mixture in a plate, spread and let it cool
11) Once cooled, it will harden. Scrape it with a wooden spatula or spoon. Press and crumble it with your hand. Add 1 tsl rose water or regular water if needed and knead it form a smooth dough
12) Cut the dough in 3 equal pieces, add food color of your choice and fill some moulds with the dough.
13) Leave it in the mould for few minutes than remove the dough Gently.
14) Voila !! Your delicious marzipan are ready. Enjoy !!
