Coconut Lime Olive Oil Cake Recipe (Gluten-Free)
(Makes 1 8-inch cake)

3 eggs
pinch salt
1 tablespoon sugar
1 tablespoon coconut extract
1 cup olive oil
1 cup coconut milk
2 cups almond meal
1 cup dates plus 3 tablespoons water
1 tablespoon + 1 teaspoon baking powder
coconut oil and desiccated coconuts for pan

Glaze
1/4 cup powdered sugar
1-2 tablespoons lime juice

350 degrees Fahrenheit for about 30 minutes
