Best Loaded Layered Veg Nachos at home! Crunchy tortilla chips layered with melty cheese, fresh veggies creamy guacamole. Perfect for parties, movie nights, or just a satisfying snack, these nachos are packed with bold flavours and textures in every bite. Customize your toppings to make it your own.


Ingredients
2 Avocado
Salt to taste
1 tsp garlic powder
1/2 tsp black pepper powder
1/4 cup + 2 tbsp chopped onion
1 tbsp olive oil
2 tsp lemon juice
2 tbsp coriander leaves
2 tbsp butter
2 tbsp all purpose flour
1.5 cup milk
1 cup cheese
Nachos
1/4 cup green onion
1/4 cup tomato
1/4 cup boiled kidney beans
1/4 cup of green and yellow bell pepper
1/4 cup boiled sweet corn
Olives

Method
Cheese sauce:
• In a pan over medium heat, melt 2 tablespoons of butter.
• Once melted, add 2 tablespoons of all-purpose flour and cook for about a minute, stirring continuously to prevent lumps.
• Slowly pour in 1.5 cups of milk in batches. Start with half the milk and whisk until the mixture is smooth and lump-free.
• Once it starts to thicken, add the remaining milk and whisk continuously until you achieve a creamy, velvety consistency.
• Add ½ cup of grated cheese and stir until it melts completely.
• Season with a pinch of salt and ½ teaspoon of black pepper powder for flavour.
• Set the cheese sauce aside to cool slightly.
Assembling the Nachos:
• On a baking tray, spread a layer of crispy nachos evenly.
• Top with a generous sprinkle of grated cheese.
• Layer on kidney beans, finely chopped onions, spring onions, diced tomatoes, green and yellow bell peppers, and sweet corn.
• Drizzle a layer of creamy cheese sauce over the toppings for an extra cheesy touch.
• Repeat the process with another layer of nachos, toppings, and cheese sauce.
• Top with more grated cheese and garnish with sliced black olives for added flavour.
• Preheat the oven to 180°C (350°F).
• Bake the tray of nachos for about 15 minutes, or until the cheese is melted, bubbly, and golden.
Guacamole Preparation:
• Scoop the flesh of 2 ripe avocados into a bowl. Mash with a fork until the mixture is smooth but slightly chunky.
• Mix in ½ teaspoon of garlic powder, salt to taste, and ½ teaspoon of black pepper powder.
• Stir in 2 tablespoons of finely chopped onion, 1 tablespoon of olive oil, 2 tablespoons of chopped coriander leaves, and 2 teaspoons of lemon juice.
• Combine everything well to create a creamy, flavourful guacamole.

• Once the nachos are out of the oven, add a generous scoop of fresh guacamole right in the center. Your Loaded Layered Veg Nachos are now ready to wow your taste buds
