In a shaker tin, add pisco, gin, demerara simple syrup, lime juice, pineapple juice and a few leaves of mint, rosemary, basil and thyme. Then add celery bitters and vanilla. Add ice and shake. Double strain into a glass then add more herbs to garnish.

Into a large mixing glass add the coffee infused Campari, the Averna Amaro, the bourbon, vanilla and chocolate mole bitters. Add ice and stir for about 30-40 revolutions. Pour into a rocks glass then place the glass under a smoking dome. Smoke the drink with cinnamon sticks for about 30 seconds then remove from smoker, add a large hand cut piece of ice and enjoy.

In a shaker tin, combine pineapple juice, rum, lime juice, simple syrup and vanilla. Add two ice cubes and do a whip shake, meaning shake the shaker until the ice has totally melted. On your tray, pour the 151 rum and set down your glass. Then, set the tray on fire and shake cinnamon onto the drink for effect. Blow out the fire and wait for it, the glass is hot.
