Pecan Praline Blondies
Blondies
6 tablespoons butter melted
⅔ cup light brown sugar
⅓ cup pure maple syrup
1 teaspoon vanilla extract
1 egg – use 2 eggs for a more “cake like” texture
¼ teaspoon kosher salt
1 cup all purpose flour + 1 tablespoon


Pecan Praline Topping
2 tablespoons butter
½ cup light brown sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 350
In a medium mixing bowl, combine melted butter, sugar, maple syrup and vanilla; mix to combine. Add egg and whisk together to fully combine. Then, add the dry ingredients (flour and salt) and incorporate.
Using an 8x8 baking dish, line with parchment paper and spread batter evenly. Set aside.
For the topping - In a small/medium saucepan, add 2 tablespoons of butter and melt over medium high heat. Add brown sugar and combine with butter. Then, add the vanilla and pecans. Continue to cook for about 2 minutes until the pecans are well coated. Remove from the heat evenly spread over the blondie mixture. Bake for 20-30 minutes (depending on your oven) until the top is lightly browned and the center is set. There will be a slight “wobble” but it should not be a full jiggle. Remove from the oven and allow to cool completely before serving. The blondies will continue to bake as they cool. DO NOT cut until they are completely cool. The center will be a “fuggy” consistency and edges will be firm. If you prefer a more cake-like consistency, add an additional egg to the mixture when baking. Enjoy!
