To make Egg Lababdar

Egg - 6 Nos
Tomato - 4 Nos
Cashew Nuts - 20 Nos
Oil - 4 Tbsp
Whole Spices
( Bay Leaf, Cinnamon, Cardamom, Cloves )
Cumin Seeds -1 Tsp
Onion - 2 Nos
Ginger Garlic Paste - 1 Tsp
Turmeric Powder - 1/4 Tsp
Kashmiri Chilli - 2 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp
Salt - 1 Tsp
Water - 1 Cup
Green Chilli - 4 Nos
Garam Masala- 1 Tsp
Sugar - 1 Tsp
Kasuri Methi
Coriander Leaves

Method

To a mixer jar, take four tomatoes, 20 soaked cashewnuts and grind it nicely. Tranfer the puree to a bowl and keep it aside.
To a wide kadai, add 4tbsp of oil, add bayleaf, cinnamon, cardamom and cloves.
Then add chopped onions, and cook it to a golden brown colour.
Add ginger garlic paste and mix well.
Add tomato puree and little water and cook well.
Once it is cooked, add turmeric powder, Kashmiri chilli powder, cumin powder, coriander powder, salt, and mix well.
Add one cup of water, slit four green chillies, garam masala powder, sugar and allow it to cook for five minutes.
Add crushed kasoori methi and mix.
Remove the bay leaf.
Crack open the eggs and pour it in the mixture, sprinkle the coriander leaves and allow it to cook for ten minutes.
Egg lababdar is done.
Serve it nice and hot with Roti or Rice of your choice.
