Chicken and Sausage Gumbo (Serves 5-6)

2.5 pounds smoked andouille sausage, sliced in 1/4” pieces
1 white onion, diced
4 stalks celery, diced
1 bell pepper, diced
3 green onions, finely chopped
2 teaspoons garlic, minced
12 cups low sodium chicken broth
1 large rotisserie chicken, skin and bones removed, chicken shredded
1 tbsp Worcestershire sauce
1 tablespoon creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
1 teaspoon gumbo file powder
Salt to taste
1 fresh bay leaf
1 sprig of fresh thyme
Serve over rice
