You know that feeling when you’re craving something chatpata but also want a proper meal?
Yeah, this Spicy Manchurian Bun is exactly that.
It’s got crispy gobhi, dipped in full-on Manchurian flavour, and just the right kick of spice.
Basically, your favourite roadside desi Chinese inside a bun!
For Cauliflower Steaks:
● 2 cauliflowers, cut into thick steaks
● 1/2 cup cornflour
● 1/2 cup refined flour
● 2 tsp red chilli powder
● Salt & pepper powder to taste
● Oil, for deep frying
For Chilli Sauce:
● 1–2 tbsp oil
● 2 tbsp chopped garlic
● 2 tsp chopped ginger
● 1 tsp chopped green chillies
● 1 onion, finely chopped
● 2 tsp schezwan sauce
● 1 tbsp green chilli sauce
● 1 tbsp red chilli sauce
● 1 tsp dark soy sauce
● 1/3 cup water
● Salt & pepper powder to taste
● 1 tbsp cornflour mixed with a little water (slurry)
● A handful of chopped spring onion greens
For Pickled Vegetables:
● 1 cup julienned onions
● 1 cup julienned carrots
● 1 cup julienned beetroot
● 2 tsp sugar
● Salt to taste
● 1/4 cup vinegar
● 1 cup water
● 2 star anise
● A few black peppercorns
For Spring Onion Mayo:
● 1 cup mayonnaise
● 1/2 cup chopped spring onion greens
● 2 tsp lemon juice
● Salt & pepper to taste
For Assembly:
● Burger buns, toasted
● Lettuce leaves
Method:
1. Prepare the Cauliflower Steaks:
● Cut the cauliflower into thick steak slices.
● In a bowl, mix cornflour, refined flour, red chilli powder, salt, and pepper with enough water to form a thick slurry.
● Coat the cauliflower steaks in the slurry and deep fry until golden and cooked through. Set aside.
2. Make the Chilli Sauce:
● Heat oil in a pan and sauté garlic, ginger, green chillies, and chopped onion until fragrant.
● Add schezwan sauce, green chilli sauce, red chilli sauce, dark soy sauce, water, salt, and pepper.
● Stir in the cornflour slurry and cook until the sauce thickens.
● Finish with chopped spring onion greens.
● Toss the fried cauliflower steaks in this sauce until well coated.
3. Pickle the Vegetables:
● In a bowl or jar, mix onions, carrots, beetroot, sugar, salt, vinegar, water, star anise and peppercorns.
● Let it sit for at least 30 minutes or overnight for best flavor.
4. Prepare Spring Onion Mayo:
● In a bowl, mix mayonnaise, spring onion greens, lemon juice, salt, and pepper. Set aside.
5. Assemble the Burgers:
● Spread spring onion mayo on the bottom half of the toasted burger bun.
● Add lettuce leaves, a saucy cauliflower steak, and a generous handful of pickled vegetables.
● Top with more mayo (optional) and close with the top.
