How to conduct a risk assessment for allergens

Each industry will have different potential sources of allergens, and therefore will have slightly different approaches to conducting a risk assessment.

In some jurisdictions, overarching policies are developed by the industry, and in these cases these policies should be enacted. For example, schools fall under the state Education Department and should follow departmental policies in those jurisdictions rather than developing a site-specific policy.

Check with your industry regulations, policies, and guidelines for any guide your organisation should follow.

Conduct a Comprehensive Allergen Audit

Perform a full review of all ingredients, materials, chemicals, environmental exposures, and products used or handled in the business - the purpose is to identify any possible known allergens. Material Safety Data Sheets (MSDS) are particularly useful to spot potential allergens.

Common food allergens:
peanuts
tree nuts
milk
eggs
soy
wheat
sesame
fish
shellfish

Common non-food allergens:
latex (gloves, balloons, adhesives)
insect stings (especially for outdoor workers)
dust mites, mould, or pollen
animal dander (lab animals, guide dogs)
medications (e.g., in healthcare settings)

Review Supply Chain and Vendor Ingredients

Request allergen declarations from all suppliers of items which may include allergens. Audit supplier facilities for cross-contamination risks.

Environmental and Surface Testing

Implement surface swab tests and air sampling to detect allergen residues. Conduct regular cleaning verification.

Maintain good ventilation and air filtration systems. Regularly inspect HVAC systems and clean filters.

Control mould, dust, and pests in a proactive manner.
