Chicken Skewers
Ingredients:
• For the Potatoes:
• 5-6 medium potatoes, cut into thick crinkle slices.
• 2-3 tablespoons olive oil
• Salt, to taste
• Black pepper, to taste
• Chilli flakes, to taste
• Thyme, to taste
• For the Chicken:
• 3 chicken breasts (approximately 700g), cut into cubes
• 2 tablespoons yogurt
• 1 tablespoon tomato paste
• 1 tablespoon honey
• 3 tablespoons olive oil
• 3 tablespoons chicken tikka masala (optional)
• Salt, to taste
• Black pepper, to taste
• Chili flakes, to taste
• Thyme, to taste
• Other Ingredients:
• 1 large onion, sliced
• Cherry tomatoes, for topping
• Long, mild Turkish green chilies (whole for topping & pieces for skewers)
Instructions:
1. Prepare the Potatoes:
• In a bowl, mix the thick crinkle-cut potatoes with olive oil, salt, black pepper, chilli flakes, and thyme until well coated.
• Arrange them around the border of the baking tray.
• Place the sliced onions in the center of the tray.
2. Marinate the Chicken:
• In a deep bowl, combine the chicken cubes, yogurt, tomato paste, honey, olive oil, chicken tikka masala, salt, black pepper, chilli flakes, and thyme.
• Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or longer for better flavour).
3. Assemble the Skewers:
• Thread the marinated chicken onto skewers.
• After every two to three pieces of chicken, add one piece of Turkish green chilli, then continue with three pieces of chicken, and repeat.
• Arrange the skewers over the onions and potatoes on the tray.
4. Add Final Toppings:
• Place whole Turkish green chillies and cherry tomatoes on top of the skewers.
5. Bake the Dish:
• Cover the tray loosely with damp parchment paper to keep the chicken moist.
• Bake in a preheated oven at 200°C (392°F) for 45 minutes, or until the chicken is fully cooked and slightly charred.
Serve hot and enjoy your delicious oven-baked chicken skewers with thick curly-cut potatoes and roasted Turkish green chilies!
