RECIPES:

1. Peach & Heirloom Tomato Salad

Salad
2 peaches
2 heirloom tomatoes
Handful cherry tomatoes
2 cups arugula
1/2 cup vegan ricotta
1/4 cup pine nuts

Dressing
1/4 cup apple cider vinegar
1/3 cup extra virgin olive oil
1 tbsp dijon mustard
1 tbsp agave
1/2 tsp salt
1/4 tsp pepper

The Magic
1. Slice up peaches and tomatoes
2. Mix all dressing ingredients into a jar and shake till combined and a thick consistency
3. Assemble the salad by layering the arugula, heirloom tomatoes, peaches clumps of the ricotta and sprinkle the pine nuts.
4. When ready to eat, pour dressing over salad generously
5. Say a prayer of gratitude, serve with love and eat with tremendous joy!


2. Peach Tartlet

Ingredients
1 pre rolled puff pastry thawed
1 cup vegan cream cheese
Juice of 1 lemon
Zest of 2 lemon
4 tbsp Maple syrup or agave
1 tbsp Corn starch (optional)
2 peaches sliced
1/4 cup blueberries (optional)

The Magic
1. Preheat oven to 400f and line a large baking tray with parchment paper
2. Unfold pastry on flat surface
3. Using a pizza cutter or a sharp knife cut into six equal rectangles (approx 5/6 inches in length and 3/4 inches in width), score another rectangle about an inch away from the outside. arrange them on baking sheets and place in the refrigerator while you make the filling.
4. Add the cream cheese, lemon juice, zest of 1 lemon , 2 tbsp of the maple syrup and corn starch into a bowl and mix till smooth
5. Add peach slices, blueberries, zest of 1 lemon and remaining maple syrup to a bowl and mix
6. Spread a thick layer of the cream cheese filling on the inside of the scored lines.
7. Top with the peaches in a diagonal line from one corner to the corner of the opposite side
8. Bake for 15 minutes or until golden brown, rotating half way if necessary.
9. Glaze the fruit with some more syrup or a peach or apricot jam while they are still hot
10. Let the tartlets cool slightly before serving
11. Say a prayer of gratitude, serve with love eat with immense joy!

Recommendations:
I use kite hill cream cheese or any nut based cream cheese when possible

3. Peaches n Yoghurt

Ingredients
1/4 cup vegan vanilla yoghurt
1 peach frozen overnight
Toasted pistachios ( or any nut of choice)
Drizzle of maple syrup (I use monk fruit syrup)

The Magic
1. Add yoghurt to a bowl or small place
2. Grate or shave peach over yoghurt
3. Roughly chop the pistachios
4. Drizze a little syrup (optional)
5. Pray, eat, love!
