Note:

1. This is a generic template for making a large quantity of caramelised onion- tomato based gravy.

2. Slit whole onions caramelise at the base and cook through in around 5 mins. 

3. Tomatoes with tops sliced off and slit cook to a mush in around 5 mins. Their skins peel away by themselves.

4. Shallots, garlic cloves are added to fill spaces and to add more flavour

5. A curry paste can be place in PIP ( tamarind- kulambu powder slurry in this case)

6. Tamarind cooks to a mush and need not even be filtered if the fibers and stalks are removed as done here.

7. The gravy is further stretched by blending with coconut milk & by the addition of pakoda ( fried dumplings)

8. The gravy can be further stretched by just increasing the quantity of curry paste.

9. The fried dumplings (pakoda) act as a vegetable substitute. These are readily available. Using them saves the hassle of chopping vegetables and in scaling up.

10. Blending base with coconut milk emulsifies the gravy and makes it creamier.
