Carrot apple muffins:
preheat oven to 375 F30
in large bowl whisk together 1 1/2 tbsp flaxseed meal & 4 tbsp water, let sit for 5 minutes
to the same large bowl add 1/3 cup maple syrup, 1 cup finely grated apples, 1 packed cup of grated carrots, 1/2 tsp vanilla, 1/4 cup melted coconut oil, 1/2 cup plain almond milk - mix!
add 2/3 cup rolled oats, 1 cup all purpose flour, 1/2 cup vanilla protein, 1/2 tsp salt, 1/2 tsp nutmeg, 1/2 tsp cinnamon, 1/2 tsp ginger, 1 1/2 tsp baking soda - mix
add mixture to a lined muffin tin and bake for 30 ish minutes or until a toothpick comes out clean. let cool for 15 min & enjoy!!
