Ingredients:
• 1.5 cups water
• 1 cup rice flour
• 1 tbsp ghee (clarified butter)
• A pinch of salt
• 1 cup freshly grated coconut (white part)
• ½ cup jaggery (cut into small pieces or jaggery powder)
• ½ tsp cardamom powder
• 1–2 tbsp ghee (for dough & stuffing)
• Few strands of saffron soaked in milk (optional, for garnish)



To prepare Ukadiche Modak, start by heating 1.5 cups of water in a pan along with 1 tablespoon of ghee and a pinch of salt. Once the water is hot, add 1 cup of rice flour and mix it well on a low flame until no dry flour remains. The key to soft modaks is maintaining the correct ratio of flour and water, which is 1 cup of rice flour to 1.5 cups of water. Once mixed, turn off the flame, cover the dough, and let it rest.

Meanwhile, prepare the stuffing by heating a tablespoon of ghee in a pan. Add 1 cup of grated coconut and sauté it for 2–3 minutes. Mix in cardamom powder and then add ½ cup of jaggery. Cook this mixture on a low flame until the jaggery melts completely and the stuffing becomes soft, juicy, and aromatic. Turn off the flame and allow the mixture to cool.

Once the rice flour dough is slightly cool, transfer it to a plate and smoothen it using a spoon or bowl. When it becomes manageable, knead it well with your hands until it is soft and pliable. Apply a little ghee at the end to make the dough smooth and easy to work with.

Grease a modak mould with ghee, fill it with the prepared dough, and press it towards the sides to create a cavity in the center. Add the coconut–jaggery filling and cover it with more dough. Remove the modak gently from the mould and repeat the same process for the remaining dough and stuffing.

Line a steaming plate with banana leaf and arrange the shaped modaks on it. Steam them on low flame for about 12–15 minutes. Once steamed, allow them to rest for 5 minutes before serving. If you like, drizzle saffron-infused milk on top for a rich festive touch.
