Episode J of #AtoZOfDesserts, a series where every letter unfolds a new delight 🥰
J for - Jim Jam Biscuits 💁🏻‍♂️ A childhood favourite, these biscuits are super simple to make and are sure to open a treasure chest of memories🤌🏻❤️ What should I make for the letter K?

Ingredients

Biscuit:
✨1½ cup maida
✨5 tbsp cold butter (65g)
✨½ cup condensed milk

Filling:
✨1 cup powdered sugar
✨¼ cup cold butter (55g)
✨1 tsp vanilla
✨Few drops of milk
Jam:
✨¾ cup strawberries
✨1 tbsp sugar
✨2 tbsp water
✨1 tsp cornflour

Instructions
1. To make the biscuit dough, combine cold butter and flour in a bowl. Using your fingers, break down butter cubes into the flour and keep doing it till you reach a sandy consistency.
2. Add in condensed milk and mix everything together to bring the dough together. If the dough feels too loose chill it in refreshing for 30 minutes.
3. For the cream filling, combine cold butter and icing sugar in a bowl. Mix the two till you reach a sandy consistency. Add in vanilla and milk to bring everything together. Set aside.
4. To make the strawberry jam, in a saucepan over medium heat add in fresh strawberries and sugar. Add in the water and cornflour slurry Cook this down till you reach a thick consistency.
5. Once the biscuit dough has chilled, start preheating your oven at 180 degree Celsius.
6. Take out the biscuit dough and using a rolling pin, roll it to about half an inch thick, in between two parchment sheets.
7. Once rolled out, using a cookie cutter, cut out individual biscuits and keep the excess dough aside.
8. Now using the back of a piping tip, cut out a small center from half of the biscuits. These will be the top biscuits of our jim jams and will allow space for the jam filling. Trace lines on the upper side of the biscuit using a knife.
9. Bake these for 10-12 minutes or until golden brown on the edges.
10. For the assembly- apply a generous layer of cream on the whole biscuit and pipe a dollop of jam in the centre and sandwich it with the biscuit with a hole in the centre. Sprinkle some granulated sugar on top of the jam.
