Mutton Biryani:
Biryani is globally popular dish among food lovers. It is gourmet’s delight. It is right combination of good quality Basmati Rice and meat. It is cooked in 3 steps. First cooking mutton done 90%. Second cooking rice done 90%. Third- Make layers ; rice+mutton +rice +mutton +rice. Seal and cook on Dum.
Following are the ingredients required.

For cooking Mutton:
Goat Meat . 750 gms
Onions. 3 medium
Tomatoes. 2 medium
Ginger garlic paste. 3 Tspoon
Green chillies. 2-3
Turmeric powder. Half Tspoon
Red chilli powder. 1.5 Tspoon
Kashmiri Red chilli powder. 1.5 Tspoon
Coriander powder. 3 Tspoon
Cumin powder. 1 Tspoon
Garam masala powder 1 Tspoon
Meat masala powder. 1.5 Tspoon
Shahi biryani masala. 1 Tspoon
Curd. 1 cup
Fried onion. Half cup
Oil. 3 Tablespoonful
Ghee (clarified butter). 1 tablespoon ful
Fresh coriander leaves
Fresh mint leaves
Kevda water (screw pine water) 1 Tspoon

For whole spices Potli:
Green cardamoms. 6
Black cardamoms. 3
Cinnamon stick. 2”
Cloves. 8-10
Black pepper corns. 12-15
Mace (javitri). 1 flower

For rice:
Basmati rice. 2 cups
Shahi jeera (caraway seeds) 1 Tspoon
Turmeric powder. Half Tspoon
Shahi biryani masala powder 2 Tspoon
Green chillies whole. 3
Clarified butter. 1 tablespoon
Bay leaves. 2
Water 5-6 cups
Whole spices ‘POTLI’

For layers:
90% cooked Mutton
90% cooked rice
Fred onion (birista)
Chopped coriander and mint leaves
Kevda water (screw pine water)
Ghee (clarified butter)
Rogan ( Tari) of cooked Mutton)
Foil paper or flour dough to seal pot
