Got bananas that are going bad? Don’t toss them—turn them into this delicious Biscoff Banana Bread! 🍌🍞 This recipe is the perfect way to reduce food waste while making a moist, flavorful treat with a hint of caramelized Biscoff goodness.

This is Part 1 of my No Food Waste Series, where we take food that’s past its prime and transform it into something delicious & budget-friendly! Saving money while creating tasty recipes? Yes, please! 🙌

✨ What You’ll Need:
✔ Overripe bananas 🍌
✔ Biscoff spread 🥄
✔ Pantry staples (flour, sugar, eggs, etc.)
✔ Easy baking steps!

Full recipe is below ⬇️

1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs, room temperature
1 1/3 cup mashed overripe bananas *I used three bananas 🍌
1/2 cup cookie butter spread, melted
1/4 of cup sour cream
1 tablespoon of vanilla bean paste or vanilla extract
2 tablespoons of whole milk
2 cups of all purpose flour
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon of ground cinnamon

For the Biscoff glaze
3/4 cups of powdered sugar
2 tablespoons of creamy Biscoff spread, melted
2-3 tablespoons of whole milk
1 teaspoon of vanilla
Pinch of salt

Add all ingredients into a small bowl and whisk well until smooth.

For Vanilla Glaze for additional drizzle
1 cup of powdered sugar
2-3 tablespoons of milk
1/2 teaspoons of vanilla

Add all ingredients into a small bowl and whisk well until smooth.
Crushed Biscoff cookies to garnish

1. Preheat the oven to 350°F.
2. Using Pam baking spray, spray loaf pan and set aside.
3. In a medium sized bowl, add the oil, sugar, eggs, banana, melted Biscoff, sour cream, vanilla and milk. Whisk well until completely combined.
4. Whisk together the dry ingredients in another large mixing bowl.
5. Add wet ingredients into the bowl with the dry ingredients.
6. Mix well until full combined.
7. Add batter into greased loaf pan. Tap pan on the counter to remove any air bubbles.
8. Bake for 60 mins or until toothpick comes out clean.
9. Allow to completely cool and drizzle with Biscoff glaze, top with crumbled cookies and drizzle with vanilla glaze.
