This golden bowl of sweet corn chowder is exactly what you need to warm you up this weekend! Its loaded with flavour and so easy to make

Ingredients:
500g frozen sweetcorn
1/2 a white onion
4 cloves of garlic
2 inch piece of ginger
400ml stock
Coriander
1 chilli
200ml coconut cream
Lime

Method:
Roast a quarter of the corn with olive oil and salt at 190c until charred.
Meanwhile, slice onion, chill, garlic and ginger. Fry onion until just browning then add the rest. Fry for another minute and then add in the sweetcorn. Cover with stock and let simmer for 10 minutes. Blend until roughly smooth and then top with fresh coriander, charred corn, coconut cream and more chilli if desired!
