Baked Caramel Corn

6-7 quarts popped corn
1 cup butter
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla

Preheat oven to 250°

Pop 6 to 7 quarts of corn.

Melt butter and stir in the brown sugar, light corn syrup, and salt. Bring to a boil while stirring constantly. Once it is boiling, allow it to continue to boil for five minutes with no stirring.

Remove from the heat. Stir in the baking soda and vanilla. Pour over the popcorn and stir to coat. Spread as evenly as possible on parchment paper covered cookie sheet pans. Bake one hour at 250°.

Remove from the oven and stir until cooled so the corn won’t dry as one lump. Spread the corn out on a piece of parchment paper and break into individual pieces.  Allow to cool completely before sealing in a covered container.
