This was an epic biryani trail. Tasting Chikmagaluru’s three most popular biryanis in the span of a single lunch! Our first stop was the half-a-century old Taj Hotel where the biryani master has been cooking over a wood-fired stove for as much time, combining cleverly three rice varieties and the choicest cuts of lamb to create a moist, deep-flavoured biryani! My next stop was Maharaja, a 20-year-old biryani house that seems to be popular again for its wood-fired, sumptuously portioned biryani. Which didn’t leave me too much space, but to wrap up this epic biryani trail with a flavour-bomb of a spicy biryani at Grand Maharaja, which at 11-years, is the newest kid on the block, but definitely punches well above its vintage in coffee towns biryani popularity charts.
