Ginger: Welcome to US Tzu Chi 360. I'm Ginger Chang. Today's feature is on one of my favorite topics, food, or better yet, local farming -- a matter that deserves much attention. It's important for all of us to know where our food is coming from and how it's was grown because learning about it is not only beneficially healthy for your body but for the environment as well. We have Rachel Franz, the co-founder of Big Apple Edibles as our guest today to share her knowledge in urban farming. Welcome Rachel!

Rachel Franz: Thanks Ginger, glad to be here!

Ginger: First off, how did you get into farming?

Rachel Franz: So I studied environmental policy in college and I came to my hometown of New York to put into practice.

Ginger: Okay. Then why do you think it's important for people to know where their food is coming from?

Rachel Franz: Right, from a personal perspective it's very important because the nutritional value of food declines by half -- 3 days after harvest. And from a policy perspective, it's very important to have as many people on board as possible. So then it can create political pressure to hopefully make a long, large-scale change. Also it's very fun getting to know farmers since we have a lot of amazing stories.

Ginger : Well speaking of amazing stories, I actually have a picture here, when you did the education summit for NBC, so can you tell us more about one of the themed gardens you did.

Rachel Franz: Absolutely. This is a photo of our 'Science in the garden' example. We did a 3 sisters garden which uses corn, beans and squash to teach the different stages of growth of different plants. And how they can be compared and contrasted.

Ginger: Well Rachel, you're not the only one who stands by the principle of self-sufficiency Let's go meet the individuals and families who believe the same thing, and put it into practice.
