Winter Pear and Blue Cheese Salad
INGREDIENTS
1/3 Cup extra virgin olive oil
1 1/2 Tbs white wine vinegar
1 Tbs Dijon mustard
4 tsp honey
1/4 tsp salt
3 oz assorted gourmet greens, such as frisee, watercress, radicchio, or arugula
1 1/2 oz butter lettuce, such as Boston or Bibb lettuce
2 ripe Bosc or Bartlett pears
Lemon juice
6 oz Gorgonzola or other blue cheese
Freshly ground black pepper


1. Place vinegar, oil, mustard, honey and salt in a small bowl and whisk together until combined. Cover and refrigerate for up to 2 days.
2. Wash greens and drain thoroughly. Pat with towels if necessary.
3.Discard any wilted leaves. Discard any woody stems.
4. Tear mixed greens into bite-size pieces. Tear enough to measure 5 packed cups. Tear enough butter lettuce to measure 2 additional cups.
5. Remove stem and core pears. Cut into 1/2 inch pieces.Toss cut pieces with lemon juice to prevent browning.
6. Break blue cheese with fingers into small pieces. Crumble enough to fill 1 1/2 cups.
7. Combine all greens in a large salad bowl. Add pears, cheese, and dressing. Toss gently to coat and sprinkle with fresh black pepper. Serve immediately.

Store undressed leftovers in refregerator. Greens, pears, dressing and cheese should all be stored separately from each other to maintain freshness.
Variations may include adding pecans or walnuts, dried cranberries, or other dried fruits.
