🥘材料
肉丝:猪里脊300克、盐3克、花雕酒15克、胡椒粉1克、半个鸡蛋清、淀粉3克、食用油30克、糖30克、甜面酱60克、葱70克
卷饼:面粉300克、开水100克、温水100克
葱姜水:大葱15克、姜15克、开水60克

🥘歩骤
1.将猪里脊300克切竖丝,放入盆中,加入3克盐、15克花雕酒、1克胡椒粉、半个鸡蛋清、淀粉3克。用手抓均匀,加入30克食用油,搅拌均匀。腌制15分钟。
2.葱姜水:大葱切丝、姜切丝,用热水,做成葱姜水。
3.大葱切成斜丝,放入盘中。
4.炒京酱肉丝:炒锅加油,油略多一点,煸炒肉丝,待肉丝变色后盛出控油。锅中留底油,改小火,放入30克白糖、60克甜面酱煸炒,葱姜水炒出香味。再加入姜丝、1克花椒粉、倒入肉丝煸炒。立即出锅,将肉丝放在葱丝盘中,肉丝上撒上少许芝麻。
5.卷饼:中粉300克,加入70克的开水,搅拌成絮状。加入50克温水,搅拌均匀。揉成面团。醒面20分钟。搓成长条,分剂子,每个面剂约10克。按扁后,在每个剂子上刷食用油。将两个剂子的油面,叠在一起。按压成圆饼,擀成圆片的卷饼坯。
6.平底锅开中火,放入擀好的卷饼坯。待一面变色,翻面。饼坯变鼓就卷饼就熟了。取出来,轻轻揭开,放入盘中。用一块湿润的屉布,盖在做好的卷饼上,防止干。
7.将京酱肉丝与葱,放在饼中间,卷成卷,就可以吃啦~
8.京酱肉丝卷饼就做好了!

❤️ 温馨提示:
1.切肉丝:如果是鲜肉不好切,放入冰箱急冻下,待肉有点挺劲儿(硬),拿出来再切比较好切。
2.炒肉:肉不要炒太久,肉失去水份,口感会硬。
3.和卷饼面:水和面的比例搭配参考:1斤面,加约350-400毫升的水(热水和常温水各一半)。
4.做卷饼:中火烙,饼很薄,饼在锅中变色后就熟了。有的饼中间会起鼓包,起包也是饼熟的一种标志。
