We love the many variations of rice pudding, but one of our favorite rice pudding recipes is the coconut rice pudding. It's full of flavor and delicious. Super simple to make. We have also listed below an Old fashioned baked rice pudding and cheesecake rice pudding. They are all delicious.

Recipe
In sauce pan combine
1.5 cups whole milk
1 can coconut milk
1 cup uncooked rice (we used Jasmin)

Stir and bring to a boil, turn heat to low, place lid on pan and cook 13-16 minutes.

Take off lid and add
1/3 cup heavy cream
1 cup sweetened condensed milk

cook another 10-12 minutes

take off heat and add
1 tsp vanilla
1 cup shredded sweetened coconut.

Enjoy warm or chilled
