So the day has arrived! I brewing two experimental brews: A raw Saison and a Wild Yeast Ale. Can't wait to taste them in a month's time. The OG was more than I expected at 1065. So if it ferments down to 1010 we are looking at two 7% beers.

Saison
500g Pale Malt Extract
250g Medium Malt Extract
13g Perle (5.6% AA) for 30mins
5g Hersbrucker (2.6% AA) for 15mins
5g Hersbrucker (2.6% AA) for 1min
Half teaspoon of Lallemand Belle Saison yeast
Quarter of a Pure Brew tablet
Quarter teaspoon of yeast nutrient

Wild Pale Ale
500g Pale Malt Extract
250g Medium Malt Extract
3g Colombus (15.8% AA) for 30mins
3g Galaxy (16.1% AA) for 15mins
3g Galaxy (16.1 AA) for 1min
Wild yeast starter
Quarter of a Pure Brew tablet
Quarter teaspoon of yeast nutrient
