A wine pumpover is when juice is separated from the fermentation vessel and then sprayed over the top of the grape skin 'cap' in order to reincorporate the skins into the wine. This oxygenates the wine and allows for more color, flavor and tannin extraction. Another way of achieving this goal on smaller fermentation vessels is by doing a punch down. This is a more physical job requiring a specialized tool to push the cap down in order to achieve those same results.
