Ingredients
For Green Peas Stuffing
¼ Cup – Green peas
1 Tbsp – Oil
1 Tsp – Cumin seeds
1 Tsp – Ginger chopped
1 Tsp – Green chilli chopped
Pinch of Turmeric powder
For Paneer Stuffing
1 Tsp – Ginger chopped
1 Tsp – Green chilli chopped
½ Tsp – Garam masala
½ Cup – Paneer grated
Salt to Taste
For Carrot Stuffing
1 Tsp – Oil
½ Tsp – Cumin seeds
1 Tsp – Ginger chopped
1 Tsp – Green chilli chopped
¼ Cup – Carrot grated
Salt to Taste
Pinch of Turmeric powder
½ Tsp – Red chilli powder
For Spinach Dough
¼ Cup – Spinach puree
1 Cup – Wheat flour
½ Tsp – Carom seeds
Salt to Taste
1 Tsp – Oil
For Carrot Dough
¼ Cup – Carrot puree
1 Tsp – Red chilli powder
Salt to Taste
½ Tsp – Carom seeds
1 Cup – Wheat flour
1 Tsp – Oil
For Paneer Dough
1 Cup – Wheat flour
Water as Required
1 Tsp – Oil
Method:-
For Green Peas Stuffing
1. In grinding jar add boiled green peas into a coarse paste.
2. Heat oil in a kadai, add cumin seeds, chopped ginger, and chopped green chilli. Sauté for a few seconds.
3. Add the coarse green peas paste, salt, and turmeric powder. Cook until the mixture is dry.
4. Transfer in mixing bowl and let it cool slightly.
For Paneer Stuffing
5. In a mixing bowl, combine grated paneer, chopped ginger, chopped green chilli, garam masala, and salt. Mix well.
For Carrot Stuffing
6. Heat oil in the same kadai, add cumin seeds, chopped ginger, and chopped green chilli.
7. Add grated carrot, salt, turmeric powder, and red chilli powder. Sauté for few minutes.
8. Transfer in mixing bowl and let it cool slightly.
For Green Dough
9. In a mixing bowl, combine this green peas mixture with spinach purée, wheat flour, carom seeds, and salt.
10. Knead into a soft dough, drizzling some oil while kneading. Set aside.
For Orange Dough
11. In a mixing bowl combine the carrot mixture with carrot purée, wheat flour, carom seeds, and salt.
12. Knead into a soft dough, drizzling some oil while kneading. Set aside.
For White Dough
13. In a mixing bowl, combine grated paneer, chopped ginger, chopped green chilli, garam masala, and salt. Mix well.
14. Add wheat flour and enough water to knead into a soft dough, drizzling some oil while kneading. Set aside.
15. Take prepared green, orange, and white dough’s and divide each into equal-sized small balls.
16. Roll each ball into a thin cylindrical shape.
17. Place one green, one white, and one orange cylinder side by side. Gently press them together so they stick.
18. Roll the three-color strip into a spiral. Press the spiral down, then roll it out evenly into a paratha.
19. Heat a non-stick tawa over medium flame.
20. Place the paratha on the tawa and cook until golden brown on both sides, brushing and drizzling with ghee.
21. Transfer in serving plate.
