In our open kitchen, our customers often ask me questions about many of our house-made products that I prepare like our relishes and sauces. Beetroot relish is one of my favourites and here are my tips for creating it, a very tasty relish that goes with duck or game or vegetarian dishes.

Ingredients
Black mustard seeds
2 onions chopped
250g brown sugar
Kilo of beetroot

The relish stores well in an air-tight container in the fridge; or store in jars as preserved beetroot.
I often get asked how to sterilise jars and it's easy, either in the oven or in the dishwasher.
