📌 Full Recipe (7 cookies):

Cookie Dough:

✔️ 115g unsalted butter, softened (½ cup / 1 stick)
✔️ 80g white sugar (⅓ cup)
✔️ 50g brown sugar (¼ cup)
✔️ Zest of 2 limes
✔️ 1 tsp vanilla extract
✔️ 1 egg (~50g)
✔️ 190g all-purpose flour (1 ½ cups)
✔️ 10g cornstarch (1 tbsp)
✔️ 3g baking soda (½ tsp)
✔️ Pinch of salt
✔️ 1 tbsp lemon juice

Cheesecake Frosting:
✔️ 170g cream cheese (6 oz)
✔️ 25g butter (2 tbsp)
✔️ 60g powdered sugar (½ cup)
✔️ 1 tbsp lime zest
✔️ 15g lime juice (juice of ½ lime / ~1 tbsp)
✔️ Vanilla to taste (about ½ tsp)

🍋 Instructions:

1️⃣ Rub sugar with lime zest to release the oils.
2️⃣ Add softened butter and mix until light and creamy.
3️⃣ Mix in the egg until smooth.
4️⃣ Add vanilla and lemon juice, mix again.
5️⃣ Whisk flour, cornstarch, baking soda + pinch of salt in a separate bowl.
6️⃣ Add dry mix to wet, stir just until combined.
7️⃣ Cover and refrigerate for 30 minutes.
8️⃣ Scoop, roll into balls, and gently press down.
9️⃣ Bake at 180°C (350°F) for 10–12 minutes. Let cool completely.

Frosting:
1️⃣ Beat all frosting ingredients until smooth.
2️⃣ Chill 15–30 minutes.
3️⃣ Pipe evenly on cooled cookies, garnish with zest or lime slices.
