Ingredients:
• 200 g of puff pastry
• 1 medium apple
• 1-2 tsp of sugar
• 1/2 tsp of ground cinnamon
• 1/8 tsp of ground cloves
• 2.5 tsp of honey
• 1 egg yolk

Cooking method:

1. Roll out the pastry sheet to about half a centimetre thick. Then use a large-diameter glass or a metal mould to cut out circles (I made 4 circles on one sheet of dough). Keep the scraps of dough for later use.

2. Next, take a glass with a smaller diameter and make a rim at each circle (press down on the dough, but don't press all the way through).

3. Use the scraps of dough to make leaves for our apples. Roll the rest of the dough into a sausage and divide it into small pieces (about 4-5 pieces). Shape each piece of dough into a leaf shape: pull out a little bit of dough, round the bottom, make one shallow vertical cut and 3-4 diagonal cuts.

4. Cut the apple into 4 pieces and cut off the core. Next, take a vegetable slicer and cut each part of the apple into slices. If you don't have such a device, just carefully slice with a knife. It's important not to cut very thinly, otherwise the slices may burn when baking.

5. Mix the sugar and cinnamon separately (you can also add a pinch of any spicy spices such as nutmeg, cinnamon, cloves).

6. Attach the leaves to the dough circles on top to make them look like real apples. Make small incisions on the pastry circle beforehand.

7. Start assembling the puffs. First, spread half a teaspoon of honey on the centre of the pastry circle and spread it evenly to the sides. Repeat with all the pastry circles.

8. Now lay out the apple slices beautifully. Take the two largest apple slices and place them on the pastry with a small gap in the middle. Next, take a couple of smaller slices and lay them in a ladder on top of the previous ones. And so on (it took me 8-10 apple slices for each circle of dough). With some of the slices, you may have to cut off the centre a little to make them fit. The last 1-2 slices should stand up almost vertically.
Tip: Assemble each apple ‘ladder’ on a plate beforehand, and only then transfer it piece by piece to the dough.

9. Sprinkle the apples with the sugar and cinnamon mixture , and brush the sides and pastry sheet with egg yolk. The apples themselves can be sprinkled with less sugar if they are sweet. But the sides of the pastry should be well coated.

10. Bake in a preheated oven at 180°C (354°F) for 14-17 minutes. Serve immediately. Enjoy!
