No-Coconut Avial Recipe | Easy Aviyal Recipe Without Coconut | Kerala Veg Curry for Onam or Vishu

This is a unique and delicious twist on the classic Kerala Avial — made without coconut but with a creamy, flavorful cashew nut paste that beautifully replaces the traditional coconut mix. This version gives a creamy, mildly spiced Avial without coconut but still full of authentic flavor. This No Coconut Avial is perfect for days when you want something very comforting.
Seasonal vegetables are cooked in stages to preserve their texture and color. A smooth paste of cashew nuts and cumin adds body, while curd and a hint of raw mango bring mild tanginess. There’s no heavy masala, no grinding of coconut — just simple ingredients and clean flavors.
This dish pairs wonderfully with hot Kerala matta rice or plain rice and papadam.

Ingredients :

25 nos (50 gms) Cashew Nuts (soaked for 15 minutes in warm water)
1 tsp Cumin Seeds (jeera, jeerakam)
10 to 12 nos (15 gms) Garlic
3 nos Green Chillies (roughly chopped) - use as per your spice tolerance
30 ml Water
100 gms Yam (sooran, chena) - cut into 2 inch batons
50 gms Long Beans (chawli, achinga payar) - cut into 2 inch batons
80 gms Drumsticks (sheng, muringakka)- cut into 2 inch batons
50 gms Green Peas (hare matar, pacha pattanni)
½ tsp Turmeric Powder
½ tsp Salt (or as per taste)
1 tbsp Coconut Oil (use as per your diet restrictions)
250 ml Water
120 gms Raw Banana (kachcha kela, vazhakkai) - cut into 2 inch batons
100 gms Ash Gourd (safed petha, kumbalanga) - cut into 2 inch batons
50 gms Snake Gourd (padval, padavalanga) - cut into 2 inch batons
50 gms Carrots (gajar) - cut into 2 inch batons
20 gms Raw Mango (kaccha aam, pacha maanga) - cut into 2 inch thin slices
1 sprig Curry Leaves - (handcrushed)
125 ml Whisked Curd
2 tbsp Coconut Oil (use as per your diet restrictions)
2 sprigs Curry Leaves - (handcrushed)

Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
