I lied, this is more of a caramelised onions videos with a burger recipe tagged on (and potato salad?) sorry, caramelised onions take a really long time
For caramelised onions:
A lot of onions, idk, I used 5 small onions which gave me about 350 grams of caramelised onions
A lot of salt
Water
For burgers:
4 brioche buns
50 gr arugula
Dijon mustard (to serve)
Mayonaise (to serve)
500 gr minced meat
Parsley
1 tablespoon Mustard
1 tablespoon Soy sauce
Pepper
For potato salad
4-5 potatoes
Parsley
1/2 tablespoon Onion powder
1 tablespoon salt
1/2 tablespoon pepper
1/2 tablespoon paprika
1/4 cup mayonnaise
Cut your caramelised onions length wise, add to a stainless steel pot, add A LOT of salt and put on medium heat, you need your onions to burn (a little) they need to leave some of their "onion-ness" on the pan for you to scrape
Every time a lot of brown "onion-ness" is left on the pan, add water and scrape scrape scrape
Note: these do take about 1 hour so be warned, it's slow but worth it
For potatoes
Cut your potatoes into bite size pieces, add to a pot with cold water, bring to a boil, once boiling turn of heat and cook your potatoes for 10 minutes, once done, remove fro water to cool. Once cool add mayonnaise, salt, garlic powder, paprika, parsely, pepper and mix well. Save and keep in fridge, enjoy cold/chilled as snack.
For burgers, mix together minced meat, chopped parsley, mustard, soy sauce, garlic powder, pepper. Mix well together (similar to kneading bread) shape into balls (I made 4) then in a cast iron skillet, heat up your oil and add one of your patties, after about 5 minutes flip, after about 3 minutes, add brie cheese. Add water into your pan and cover with a lid to melt your cheese.
Meanwhile, heat up a pan with butter and toast your brioche buns, once toasted add mayonnaise, dijon mustard, caramelised onions. Serve your patty and melted brie on top and top with arugula!
