This recipe for super easy oat and peanut butter cookies gives you almost cake like, soft oat flour cookies. So step away from the usual oat porridge and give this breakfast oat recipe a try. Happy baking!

Ingredients for Oat and Peanut Butter breakfast oat recipe:

Oat flour - 1 and 1/4 cup
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - 1/4 tsp
Unsalted butter - 1/2 cup
Peanut butter - 1/2 cup
Eggs - 2
Dried cranberries - 1/2 to 1 cup

Directions:
1. Mix the oat flour, baking powder, baking soda, salt and set aside.
2. Cream unsalted butter, peanut butter, sugar, brown sugar in a large bowl.
3. Beat in eggs.
4. Mix in dry ingredients and cranberries to the butter mixture and refrigerate for one hour.
5. Scoop out tablespoon size balls of cookie dough and put on parchment-lined cookie sheet.
6. Bake at 170°C for 12-15 minutes (until cookies start browning slightly).
7. Remove and place on cooling rack until completely cooled down.

Enjoy with a glass of milk!
