We make idly regularly. But today we will give it a healthy twist by adding spinach to it. It is colourful and healthy too. This is very easy recipe and tasty too. This is a realy quick recipe. You will get tips to retain the green color of palak. It turns out nice, spongy and soft. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 1 tsp Oil
• 3~4 Garlic cloves
• Chopped Green chilies
• 3 cups Spinach leaves
• 2 Ice cubes
• 1 cup coarse Suji
• 1/4 cup Curd
• 1/2 cup Water
• Salt to taste
• 1/4 cup Water
• 1/2 tsp Eno fruit salt
• 1 tsp Water

Method:
• Heat up oil in a pan and add garlic, green chilies.
• Mix well and add spinach leaves.
• You can boil the leaves if you want.
• Mix well and cook for just 3-4 minutes.
• Turn off the gas.
• Transfer everything into a blender jar and blend it into puree.
• When it is almost pureed, add ice cubes and blend again.
• You can use ice cold water in place of ice cubes.
• Take suji, curd in a bowl and mix well.
• Add 1/2 cup palak puree and mix well.
• Add water and mix well.
• Add salt, water and mix well.
• Cover and rest the batter for at least 15-20 minutes.
• Add eno fruit salt, water and mix in quickly.
• Grease the idly molds well with oil.
• Add the batter into the molds and stack the molds on the idly stand.
• Heat up about 1” water at the base of the idly cooker and transfer the idly stand into it.
• Close the lid and steam the idlies on medium heat for 20 minutes.
• Turn off the gas and let the lidlies be in the cooker for another 5 minutes.
• Open the lid and take the idly stand out.
• Let it cool down for about 5-10 minutes and take the idlies out with the help of spoon or knife.
• Palak idly is all ready.
• You can make 12 idlies from 1 cup suji.
