Simple Dish that I miss eating back home in the Philippines.

INGREDIENTS:
1 medium size Pompano Fish or any kind of Fish, scaled and cleaned
1 knob ginger (sliced and pounded)
5 cloves of garlic skin removed/crushed
1 cup water
1/2 cup white vinegar
1 medium onions, sliced
5 pepperoncini or any sweet or any hot peppers
salt and pepper to taste
1 American eggplant or any kind of eggplant, sliced (optional)

ENJOY AND EAT IT WITH STEAMED RICE

REMINDER:
Foods that are acidic, such as tomatoes or foods that contain lemon juice or vinegar, should not be cooked in reactive cookware. Aluminum, copper, iron, and non-stainless steel are reactive cookware. Their surfaces will release atoms of metal into the food and can give the food an off taste or discoloration.
