HOW TO MAKE SWEET LONGGANISA | MY OWN HOME MADE RECIPE | SWEET AND GARLICKY


Learn how to make sweet longganisa. It is my own home made recipe that is sweet and garlicky at the same time.

This sweet longganisa recipe is my take on the classic longganisa in sausage casing. I used minced pork with about 10% fat content to come up with a meaty longganisa.

While most would like their longganisa with more fat, my version of sweet longganisa is more on the meaty side.

Classic sweet longganisa comes in a casing. For my home made recipe of sweet longganisa, I used natural hog casing which I purchased from a local butcher that has been very well cleaned, salted and neatly packaged. The hog casing should be immersed on warm water at least 2 hours prior to use.


My home made recipe of longganisa is both sweet and garlicky with a smoky flavour with the use of smoked paprika powder. That smokiness adds to the classic flavour and taste of longganisa for this recipe.

I used an electric meat grinder with a sausage making attachment to make my sweet longganisa from scratch. You can always use a manual meat mincer with a sausage attachment or a dedicated manual sausage maker or even a DIY sausage maker using an empty water bottle with the bottom cut-off.

HOME MADE RECIPE ON HOW TO MAKE SWEET LONGGANISA | SWEET AND GARLICKY


INGREDIENTS:


1. Minced Pork with 10% fat (1 kg)
2. Sugar (1.5 cups)
3. Garlic finely chopped (1/4 cup)
4. Garlic salt powder (1 tbspn)
5. Allspice powder (1 tbspn)
6. Smoked paprika (1 tbspn)
7. Salt (1 tbspn)
8. Soy Sauce (1/4 cup)
9. Hog casing (sausage casing) available from the butcher
10. Cooking string


Tool/equipment needed:
1. Meat grinder with sausage attachment or manual sausage maker or DIY sausage maker



STEPS:

A. Making the Longganisa

1. In a large mixing bowl, mix minced pork with the chopped garlic, garlic salt, allspice powder, smoked paprika, sugar, salt and soy sauce.
2. Mix well and cover the bowl with cling film.
3. Keep in the fridge overnight (recommended)
4. Before placing the longganisa meat mixture in the casing, make sure to dip the hog casing in warm water before use. This will make it soft enough for use in casing the longganisa mixture.
5. Insert hog casing into the sausage attachment of the meat grinder. Insert enough length for the meat mixture. Cut off excess hog casing.
6. Load enough longganisa meat mixture into the hopper plate of the meat grinder/sausage maker
7. Using the food pusher of the meat grinder, push the meat mixture down the head of the meat grinder into the feed screw.
8. Turn the meat grinder switch on and push down the meat using the food pusher. The meat mixture should start to fill the hog casing
9. Continue this process until all the meat mixture has been consumed.
10. Tie the front end of the filled hog casing
11. Starting from the front end of the filled hog casing, tie individual longganisa about 2 inch length.
12. Continue until the tail end of the filled hog casing


B. Cooking the Longganisa

1. Heat ¼ cup water on frying pan on low fire
2. Add the longganisa chain
3. Cover and allow to cook until all water evaporates flipping the longganisa to cook evenly.
4. Pierce each longganisa with a skewer to release liquid from inside and avid it from squirting during frying
5. Add cooking oil into the pan and fry the longganisa on low fire
6. Cut off the longganisa chain to allow each piece to cook evenly and remove cooking string during frying
7. Serve with fried rice, fried egg, your favorite side and vinegar as dipping sauce.
