Rebel Keto Coffee Chip Ice Cream - SUGAR FREE and KETO

Keto ice cream and sugar free ice cream are big things these days so I thought it was time to do my first video on the subject.
I've taken Rebel Coffee Chip and broken it down to something that not only tastes amazing, but is just like Haagen Dazs or Ben & Jerry's (actually better 😉 ) quality and not the over pumped stuff you have to buy in the stores.
So without further ado, I give you Keto friendly, sugar free coffee chip ice cream that will blow you away.

Keto is high fat and low net carbs and this breaks down as below:

400g Cream @ 33% fat (12g net carbs)
100g Water (0 carbs)
130g Allulose (0 carbs)
30g Inulin Powder (1.5g net carbs)
20g SMP (10g net carbs)
90g Egg Yolks (3.6g net carbs)
15g Coffee Powder (1.2g net carbs)
2g Tara gum (or 2g normal stabiliser mix)

100g Dark Chocolate Strachiatella (20g net carbs)
10g Olive Oil (0 carbs)

897g total weight/50.3g net carbs unchurned
Finished churn volume - 1280L (Overrun of 42%)
Total= 2.7 pints
Net Carbs= 18.6 net carbs per pint

NOTE: This is NOT THE SAME as the 95% overrrun keto ice cream you only find in the stores, this is something very different. The BEST there is and I dare you to offer this to someone who isn't Keto or Sugar Free. If you were to increase the overrun to 100% like Rebel or any other keto/no sugar offerings in the stores, the numbers would be lower but the taste is crap!
