📋 FULL RECIPE:
Keto Dinner Rolls - TRIPLE BATCH (24 rolls)
Ingredients:
• 6 cups (672g) almond flour
• 3/4 cup (84g) coconut flour
• 6 tsp (24g) baking powder
• 1 1/2 tsp (6g) xanthan gum
• 2 1/4 tsp (13.5g) salt
• 3/4 tsp (3g) garlic powder (optional)
• 12 large eggs (600g without shells)
• 3/4 cup (171g) melted butter
• 6 tbsp (90g) sour cream or Greek yogurt
• 3 tbsp (45ml) apple cider vinegar
For brushing (optional):
• 3 tbsp (42g) melted butter
• Sesame seeds or everything bagel seasoning
Instructions:
MEXICO CITY (7,350 ft):
1. Preheat oven to 350°F (175°C). Line 2-3 baking sheets with parchment paper.
2. In a large bowl, whisk together almond flour, coconut flour, baking powder, xanthan gum, salt, and garlic powder.
3. In another bowl, whisk eggs, melted butter, sour cream, and vinegar until smooth.
4. Pour wet ingredients into dry and mix until a thick dough forms. Let sit 2-3 minutes to thicken.
5. Using a 1/4 cup scoop or your hands, form 24 equal rolls and place on prepared baking sheets, spacing them 2 inches apart.
6. Brush tops with melted butter and sprinkle with seeds if desired.
7. Bake 20-25 minutes until golden brown and firm to the touch (rotate pans halfway through if needed).
8. Cool on a wire rack.
SEA LEVEL:
1. Preheat oven to 325°F (165°C). Line 2-3 baking sheets with parchment paper.
2. Follow same mixing instructions.
3. Form 24 rolls on prepared sheets.
4. Brush with butter and add seeds if desired.
5. Bake 25-30 minutes until golden brown and firm (rotate pans halfway through).
6. Cool on a wire rack.
Total for triple batch (24 rolls):

TIPS:
• Don’t skip beating the eggs- this creates the fluffy texture
• Add extra garlic if you love it!
• Brush with butter and garlic immediately after baking for extra flavor
