Kapampangan Tamales I Bobotu

Kapampangan Tamale (or Bobotu - the version without meat/chicken ) is a savoury rice flour (galapong) and coconut milk dish with sauteed chicken, salted duck eggs and a special annatto based topping wrapped in banana leaves and then steamed.

Tamales can be served for breakfast, or even as a snack! It is best eaten freshly steamed, or at least warm to fully appreciate its delicious goodness! Back in our growing up days, my Great Grandma, Apung Celia (Cecilia) brings these for us as treat whenever she visits us on her way home from the daily morning mass at the parish church.

Looking back now that I am older, I greatly treasure those heartwarming moments growing up when we sat around our grandmas and great grandmas as they make the different delicacies, especially around Christmas time. I vividly remember the delicacies they make are their gift exchanges! Oh if I could just turn back the time, I would probably have had each one of them to personally handwrite each of their specialties in my Recipe Book: Apung Pitang's Ale Ube, Apung Puring's Russian Macaroni Salad, Impung Bebing's Suman Pasko, Apung Oriang's Cassava Suman, Apung Doding's Leche Flan, Apung Aning' Bringhe. We hardly ever buy any "kakanin" back in the day, we have always enjoyed them homemade by grandmas!

I could still remember when all the grandmas hang around, they munch on a concoction of betel nut (luyos), lime (api) and pounded into paste then wrapped in betel leaf. Of course, we kids weren't allowed to have that, as it requires a special skill to leave it in the mouth without burning it! :)
We would just then be satisfied to munch on the Cabalantian Duman, which is a special kind of greenish fragrantly sweet rice.
